Potato Salad

Potato Salad

I am a big fan of potatoes salad all summer long. One summer I was at a party there was amazing potato salad pretty typical except for unexpected ingredient which was radishes in the salad. I am not a big radish personally but when it comes to having radishes in potato salad total must have.

List A

2 pounds baking potatoes, peeled, cut in to bite size pieces
2 pounds russet potatoes peeled, cut in to bite size pieces
2 pounds Yukon gold, cut in to bite size pieces
2 pounds red potatoes, quartered

List B

1 cup thinly sliced radishes
1 cup thinly sliced celery
1 cup shredded carrots

List C
¼ cup green onion, chopped
¼ cup yellow onion, finely chopped
¼ cup red onion, finely chopped
¼ cup Brown onion, finely chopped
¼ cup sweet onion, finely chopped

List D
Pick at least one of the following but no more than three
4 hard-boiled eggs
8 strips of bacon
8 strips of turkey bacon
½ cup corn
½ cup pea
½ cup bell peppers

List E
1cup Mayonnaise
1cup yogurt
1cup salad dressing
1cup sour cream
Or any combination of the above choices to equal 1 cup

Place one choice from List A in a large pot, and cover with water, bring to boil and cook until tender but still firm, about 15 min. Drain, let cool in the refrigerator at least 30 min.
In a lager bowl mix together one chose from each of the following list A, B, C, D and E.
Refrigerate for at least 1 hour to allow flavors to blend.

Warning: I have not tried all the combination. I have tried many of the combination and they all have worked.
